Turkey California-Blend Vegetable Skillet

Ingredients

  • 907 g California vegetable blend
  • 454 g 99% lean ground turkey
  • 2 eggs
  • 10 mL olive oil
  • 45 mL soy sauce
  • 30 mL rice vinegar
  • 12 g garlic
  • 10 g ginger
  • crushed red pepper to taste

Method

  1. Brown the ground turkey in a very large skillet or wok with about half the olive oil, breaking it into small pieces. Remove and set aside.
  2. Add the frozen California vegetable blend to the skillet.
  3. Cook uncovered over high heat for 8-10 minutes, stirring occasionally, so the excess water evaporates. Avoid crowding into a deep pot.
  4. Add the garlic, ginger, and crushed red pepper to taste. Cook for 30-60 seconds, stirring constantly.
  5. Push the vegetables to one side of the skillet. Add the remaining olive oil to the empty side and crack in the eggs. Scramble, chopping into small pieces, then mix through.
  6. Return the turkey to the skillet.
  7. Add the soy sauce and rice vinegar. Toss for 1-2 minutes over high heat and serve.
