Ingredients

Rice

  • 1 1/2 cups dry jasmine rice
  • low-fat bone broth

  • 24 oz / 680 g peeled shrimp
  • 4-6 cloves garlic
  • 2 tbsp reduced-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp crushed red pepper
  • juice of 1/2 lime
  • black pepper

Method

Rice

  1. Cook the jasmine rice according to the package's liquid ratio, substituting low-fat bone broth for the water.

Shrimp

  1. Cook the shrimp quickly in a nonstick skillet over medium-high heat, about 1-2 minutes per side, until pink and opaque.
  2. Add the garlic during the final minute of cooking to avoid burning it.
  3. Add the soy sauce, rice vinegar, crushed red pepper, and lime juice. Toss to coat.

Finish

  1. Adjust seasoning with black pepper. Serve over the jasmine rice.
