Ingredients

Rice

  • 1 1/2 cups dry jasmine rice
  • low-fat chicken bone broth required to cook rice

Main

  • 20 oz / 567 g cooked skinless chicken breast, cubed
  • 3 tbsp reduced-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp rice vinegar
  • crushed red pepper to taste

  • optional green onion garnish

Method

Rice

  1. Cook the jasmine rice according to the package's liquid ratio, substituting low-fat chicken bone broth for the water.

Chicken

  1. Warm the cooked, cubed chicken in a nonstick skillet with a few tablespoons of bone broth.
  2. Add the garlic and ginger. Cook for 30-60 seconds, stirring constantly, until fragrant.
  3. Add the soy sauce, rice vinegar, and crushed red pepper to taste.

Finish

  1. Fold the seasoned chicken into the cooked rice, or serve it over the rice.
  2. Top with sliced green onion if desired and serve.
