Ground turkey browned and broken into small pieces, cooked with shredded cabbage and carrots and scrambled egg, finished with soy sauce, rice vinegar, garlic, and ginger.

Ingredients

  • 907 g / 2 lb shredded cabbage
  • 454 g 99% lean ground turkey
  • 170 g shredded or frozen carrots
  • 2 eggs
  • 10 mL olive oil
  • 45 mL soy sauce
  • 30 mL rice vinegar
  • 12 g garlic
  • 12 g ginger
  • 1/2 tsp crushed red pepper

Method

  1. Brown the ground turkey in a very large skillet or wok with about half the olive oil, breaking it into small pieces with the spatula. Remove and set aside.
  2. Add the shredded cabbage and carrots to the skillet.
  3. Cook uncovered over medium-high to high heat for 7-10 minutes, stirring occasionally, until the cabbage softens while still keeping some texture.
  4. Add the garlic, ginger, and crushed red pepper. Cook for 30-60 seconds, stirring constantly, until fragrant.
  5. Push the cabbage mixture to one side of the skillet. Add the remaining olive oil to the empty side and crack in the eggs. Scramble, chopping into small pieces with the spatula, then mix through.
  6. Return the turkey to the skillet.
  7. Add the soy sauce and rice vinegar near the end. Toss everything together thoroughly and serve.
