A huge, filling skillet of cauliflower rice, chicken, vegetables, and egg with garlic, ginger, soy sauce, and a little heat. Built for food volume: a large portion, plenty of protein, lots of vegetables, and very little added oil.
16 oz (454 g) cooked rotisserie chicken, skin removed and cut into small cubes
6 oz (170 g) frozen mixed vegetables, such as peas, carrots, green beans, or corn
2 large eggs
2 teaspoons (10 mL) olive oil
3 tablespoons (45 mL) reduced-sodium soy sauce
4 cloves garlic, minced, about 12 g
1 tablespoon fresh ginger, minced or grated, about 10 g
1/2 teaspoon crushed red pepper flakes, or to taste
Black pepper to taste
Optional
1 teaspoon honey for a slightly sweet version
Sliced green onions
Additional crushed red pepper or hot sauce
Round whole items like eggs to what makes sense.
Method
Heat a large skillet or wok over medium-high to high heat. Add 1 teaspoon of the olive oil.
Add the frozen cauliflower rice and mixed vegetables. Cook uncovered for 6-8 minutes, stirring periodically, until the vegetables are hot and much of the excess moisture from the cauliflower has cooked away. Letting the cauliflower dry out before adding the sauce keeps the finished dish more like fried rice and less like steamed cauliflower.
Add the garlic, ginger, and crushed red pepper. Cook for about 30-60 seconds, stirring constantly, until fragrant.
Push the cauliflower mixture to one side of the skillet.
Add the remaining teaspoon of olive oil to the empty side. Crack in the eggs. Let them begin to set, then scramble and chop them into small pieces with the spatula.
Mix the cooked egg into the cauliflower.
Add the cubed chicken and cook for 2-3 minutes, just long enough to heat it through.
Add the soy sauce and toss everything together over high heat for another 1-2 minutes.
If using honey, stir in 1 teaspoon now. Taste and adjust the soy sauce, crushed red pepper, or black pepper as desired.
Remove from the heat and serve immediately.
