Garlic-Pepper Pork Tenderloin Basmati
Cubed pork tenderloin cooked hot and fast with garlic and black pepper, finished with soy sauce and rice vinegar, over basmati rice cooked in bone broth.

Rice 1 1/2 cups dry basmati
chicken bone broth
Main 20 oz trimmed pork tenderloin
5 cloves garlic
2 tsp coarse black pepper
2 tbsp soy sauce
1 tbsp rice vinegar

Method
Rice Cook the basmati rice according to the package's liquid ratio, substituting chicken bone broth for the water.
Pork Cube the pork tenderloin and cook in a hot nonstick skillet until browned and cooked through, about 4-6 minutes.
Add the garlic and coarse black pepper (and ginger, if using). Cook for 30-60 seconds, stirring constantly.
Finish Add the soy sauce and rice vinegar, tossing to coat. Serve over the basmati rice.
