Cubed pork tenderloin cooked hot and fast with garlic and black pepper, finished with soy sauce and rice vinegar, over basmati rice cooked in bone broth.

Ingredients

Rice

  • 1 1/2 cups dry basmati
  • chicken bone broth

Main

  • 20 oz trimmed pork tenderloin
  • 5 cloves garlic
  • 2 tsp coarse black pepper
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar

Optional

  • ginger optional

Method

Rice

  1. Cook the basmati rice according to the package's liquid ratio, substituting chicken bone broth for the water.

Pork

  1. Cube the pork tenderloin and cook in a hot nonstick skillet until browned and cooked through, about 4-6 minutes.
  2. Add the garlic and coarse black pepper (and ginger, if using). Cook for 30-60 seconds, stirring constantly.

Finish

  1. Add the soy sauce and rice vinegar, tossing to coat. Serve over the basmati rice.
