Black-Pepper Pork Tenderloin & Cabbage

Ingredients

  • 907 g cabbage
  • 510 g pork tenderloin
  • 225 g green beans
  • 10 mL olive oil
  • 45 mL soy sauce
  • 30 mL rice vinegar
  • 15 g garlic
  • 10 g ginger
  • 2 tsp coarse black pepper
  • crushed red pepper to taste

Method

  1. Cook the pork tenderloin in a very large skillet or wok with about half the olive oil until browned and cooked through, about 4-6 minutes. Remove and set aside.
  2. Add the cabbage and green beans to the skillet.
  3. Cook uncovered over medium-high to high heat for 7-10 minutes, stirring occasionally, until the cabbage softens while still keeping some texture.
  4. Add the garlic, ginger, coarse black pepper, and crushed red pepper to taste. Cook for 30-60 seconds, stirring constantly.
  5. Return the pork to the skillet.
  6. Add the soy sauce and rice vinegar near the end. Toss thoroughly and serve.
