Ingredients

  • 150 g low-fat cottage cheese
  • 18 g unsweetened cocoa powder
  • monk-fruit/allulose sweetener to taste
  • 12 g no-sugar-added chocolate chips
  • 1/2 tsp vanilla extract
  • small pinch salt

Method

  1. Preheat the oven to 350°F / 175°C.
  2. Blend the cottage cheese, cocoa, sweetener, vanilla, and salt until completely smooth.
  3. Fold in half the chocolate chips.
  4. Spread into a lightly prepared small baking dish.
  5. Sprinkle the remaining chocolate chips over the top.
  6. Bake for approximately 18-22 minutes, until the edges are set but the center remains soft.
  7. Let stand 3-5 minutes.
  8. Eat warm directly from the baking dish if desired.
