Ham, Egg & Potato Freezer Breakfast Bake
A baked egg, potato, ham, and sweet pepper casserole cut into individually frozen portions -- an alternative to burritos for a portionable, tortilla-free breakfast.

Ingredients
8 large eggs
600 g liquid egg whites
700 g cooked diced potatoes
450 g lean ham, diced
150 g baby sweet peppers, diced
12 g minced garlic
1 tsp paprika
1 tsp black pepper
salt as needed
cooking spray or small amount oil for dish
Round whole items like eggs to what makes sense.
Method
Heat the oven to 350°F / 175°C.
Lightly prepare a large baking dish.
Spread the potatoes, ham, peppers, and garlic across the dish.
Whisk the eggs and egg whites together.
Season the egg mixture with paprika, black pepper, and salt.
Pour over the filling.
Bake until the center is fully set, approximately 30-40 minutes.
Cool.
Cut into 8 portions.
Freeze the portions individually.
Reheat in the microwave from thawed or frozen until fully heated, optionally finishing briefly in a skillet or air fryer for browned edges.
