Scrambled eggs and egg whites with browned potatoes and a lean breakfast meat of choice, rolled into high-fiber/low-carb tortillas and frozen individually for a grab-and-reheat breakfast.

  • 8 large low-carb/high-fiber tortillas
  • 8 large eggs
  • 500 g liquid egg whites
  • 700 g potatoes, diced small
  • 450 g cooked lean breakfast meat, diced or crumbled
  • 10 g ghee or olive oil
  • 12 g minced garlic
  • 1 tsp paprika
  • 1 tsp black pepper
  • salt to taste

  • optional cayenne
  • optional salsa for serving after reheating

Method

  1. Cook the potatoes in the ghee or olive oil until tender and lightly browned.
  2. Cook the meat separately if not already cooked.
  3. Scramble the whole eggs and egg whites until just set.
  4. Combine the potatoes, meat, eggs, garlic, paprika, black pepper, and cayenne if using.
  5. Allow the filling to cool substantially before assembling the burritos.
  6. Divide the filling evenly among the tortillas.
  7. Fold the sides inward and roll tightly.
  8. Wrap each burrito individually for freezing.
  9. Freeze in a single layer until solid, then transfer to freezer storage.
  10. To reheat from frozen: remove the wrapping, microwave at reduced power until thawed through, then continue heating until the center is steaming hot.
  11. Optionally finish in a dry skillet or air fryer to crisp the tortilla.
  12. Serve salsa separately after reheating rather than freezing it inside the burrito.
