Cottage Cheese Oat Pancakes
Simple high-protein pancakes made from oats, eggs, and cottage cheese. The oats are first blended into fresh oat flour, then combined with eggs and cottage cheese to make a thick, hearty batter.

Ingredients
Batter 1 cup (80 g) dry rolled oats
1 cup (225 g) cottage cheese
4 large eggs
1/4 teaspoon salt
Cooking 1-2 teaspoons ghee, for cooking
Round whole items like eggs to what makes sense.
Method
Batter Add the dry oats to a blender.
Blend until the oats become a fine flour.
Pour the oat flour into a bowl and set aside.
Add the eggs and cottage cheese to the blender.
Blend until smooth.
Return the oat flour to the blender and add the salt.
Blend again until everything is thoroughly combined into a thick pancake batter.
Let the batter rest for about 2-3 minutes. The oat flour will absorb some of the moisture and thicken slightly.
Cooking Heat a nonstick skillet or griddle over medium heat.
Add a small amount of ghee -- just enough to lightly coat the cooking surface.
Pour approximately 1/4 cup batter for each pancake.
Cook until the edges begin to set and the underside is browned, approximately 2-3 minutes.
Flip carefully and cook the second side for another 1-2 minutes, until cooked through.
Repeat with the remaining batter, adding small amounts of ghee only as needed.
Serve hot.
