- 120 g cottage cheese
- 70 g oat flour
- 20 g vanilla whey
- 1 egg
- monk-fruit/allulose sweetener
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- pinch salt

Method
- Preheat the oven to 350°F / 175°C.
- Blend the cottage cheese until smooth.
- Mix with the egg and vanilla.
- Stir in the oat flour, whey, sweetener, cinnamon, baking powder, and salt.
- Let the batter stand 3-5 minutes so the oat flour hydrates.
- Form 8 cookies on parchment paper and flatten.
- Bake for approximately 10-14 minutes.
- Eat warm for the softest, chewiest texture.
