Taco Turkey Pepper & Vegetable Skillet

Ingredients
- 907 g frozen vegetable mixture
- 454 g 99% lean ground turkey
- 240 g / 1 cup salsa
- 10 mL olive oil
- 2 tsp chili powder
- 2 tsp cumin
- 1 tsp smoked paprika
- 1 tsp garlic powder
- lime juice

Method
- Brown the ground turkey in a very large skillet or wok with about half the olive oil, breaking it into small pieces. Remove and set aside.
- Add the frozen vegetable mixture to the skillet.
- Cook uncovered over high heat for 8-10 minutes, stirring occasionally, so the excess water evaporates. Avoid crowding into a deep pot.
- Add the chili powder, cumin, smoked paprika, and garlic powder. Cook for 30-60 seconds, stirring constantly.
- Return the turkey to the skillet along with the salsa.
- Toss for 1-2 minutes over high heat, finish with lime juice to taste, and serve.
