Taco Turkey Pepper & Vegetable Skillet

Ground turkey cooked with a frozen mixture of peppers, onions, zucchini, and corn (or similar), seasoned with a classic taco spice blend and salsa.

Ingredients

  • 907 g frozen vegetable mixture
  • 454 g 99% lean ground turkey
  • 240 g / 1 cup salsa
  • 10 mL olive oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • lime juice

Method

  1. Brown the ground turkey in a very large skillet or wok with about half the olive oil, breaking it into small pieces. Remove and set aside.
  2. Add the frozen vegetable mixture to the skillet.
  3. Cook uncovered over high heat for 8-10 minutes, stirring occasionally, so the excess water evaporates. Avoid crowding into a deep pot.
  4. Add the chili powder, cumin, smoked paprika, and garlic powder. Cook for 30-60 seconds, stirring constantly.
  5. Return the turkey to the skillet along with the salsa.
  6. Toss for 1-2 minutes over high heat, finish with lime juice to taste, and serve.
