Ingredients

  • 907 g cabbage
  • 454 g lean ground turkey
  • 255 g drained black beans
  • 411 g diced tomatoes, drained
  • 170 g peppers
  • 10 mL olive oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • lime juice

Method

  1. Brown the ground turkey in a very large skillet or wok with about half the olive oil, breaking it into small pieces. Remove and set aside.
  2. Add the cabbage and peppers to the skillet.
  3. Cook uncovered over medium-high to high heat for 7-10 minutes, stirring occasionally, until the cabbage softens while still keeping some texture.
  4. Add the chili powder, cumin, smoked paprika, and garlic powder. Cook for 30-60 seconds, stirring constantly.
  5. Return the turkey to the skillet along with the black beans and drained diced tomatoes.
  6. Add lime juice to taste, toss thoroughly, and serve.
