Cook the pork tenderloin in a large skillet or wok with about half the olive oil until browned and cooked through, about 4-6 minutes. Remove and set aside.
Add the frozen cauliflower rice and peppers and onions to the skillet.
Cook uncovered over medium-high to high heat for 6-8 minutes, stirring periodically, until much of the excess moisture has evaporated.
Add the chili powder, cumin, smoked paprika, garlic powder, oregano, and cayenne. Cook for 30-60 seconds, stirring constantly.
Return the pork to the skillet.
Add the lime juice. Toss everything together over high heat for 1-2 minutes and serve.
