Pork Fajita Cauliflower Rice

Cauliflower rice and pork tenderloin with frozen peppers and onions, seasoned with a classic fajita spice blend and lime.

Ingredients

  • 680 g cauliflower rice
  • 510 g pork tenderloin
  • 340 g frozen peppers and onions
  • 10 mL olive oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • juice of 1 lime
  • cayenne to taste

Method

  1. Cook the pork tenderloin in a large skillet or wok with about half the olive oil until browned and cooked through, about 4-6 minutes. Remove and set aside.
  2. Add the frozen cauliflower rice and peppers and onions to the skillet.
  3. Cook uncovered over medium-high to high heat for 6-8 minutes, stirring periodically, until much of the excess moisture has evaporated.
  4. Add the chili powder, cumin, smoked paprika, garlic powder, oregano, and cayenne. Cook for 30-60 seconds, stirring constantly.
  5. Return the pork to the skillet.
  6. Add the lime juice. Toss everything together over high heat for 1-2 minutes and serve.
