Ingredients

  • 1.35 kg / 3 lb lean ground beef
  • 12-16 small corn tortillas
  • 700-800 g enchilada sauce
  • 150-200 g shredded cheese
  • 24 g minced garlic
  • 1 tbsp cumin
  • 2 tsp paprika
  • cayenne to taste
  • chili powder to taste
  • modest salt

Method

  1. Heat the oven to 375°F / 190°C.
  2. Brown the beef thoroughly.
  3. Add abundant garlic, cumin, paprika, cayenne, and chili powder.
  4. Spread a small amount of enchilada sauce over the bottom of a baking dish.
  5. Add a layer of corn tortillas.
  6. Add a substantial meat layer.
  7. Spoon enchilada sauce over the meat.
  8. Add only a modest amount of cheese.
  9. Repeat the tortilla, meat, sauce, and cheese layers.
  10. Finish with tortillas, sauce, and a relatively light cheese layer.
  11. Bake until bubbling and heated throughout.
  12. Rest briefly before slicing.
