Curry Shrimp Cauliflower Rice
Shrimp and cauliflower rice with peas, wilted spinach, and a generous amount of curry powder, brightened with fresh lime.

Ingredients
- 680 g cauliflower rice
- 567 g shrimp
- 170 g frozen peas
- 140 g spinach
- 10 mL olive oil
- 2 tbsp curry powder
- 12 g garlic
- 12 g ginger
- 1/2 tsp crushed red pepper
- juice of 1 lime
- salt and black pepper

Method
- Cook the shrimp in a large skillet or wok with about half the olive oil until pink and opaque, about 1-2 minutes per side. Remove and set aside.
- Add the frozen cauliflower rice and peas to the skillet.
- Cook uncovered over medium-high to high heat for 6-8 minutes, stirring periodically, until much of the excess moisture has evaporated.
- Add the curry powder, garlic, ginger, and crushed red pepper. Cook for 30-60 seconds, stirring constantly, until fragrant.
- Wilt the spinach into the skillet.
- Return the shrimp to the skillet.
- Add the lime juice, salt, and black pepper. Toss everything together over high heat for 1-2 minutes and serve.
