Curry Chicken Vegetable Skillet

Chicken cooked with a substantial frozen vegetable blend (broccoli, cauliflower, carrot, and peas, or a comparable mix), seasoned generously with curry powder and finished with lime.

Ingredients

  • 907 g frozen vegetable blend
  • 454 g chicken
  • 10 mL olive oil
  • 2 tbsp curry powder
  • 12 g garlic
  • 12 g ginger
  • 1/2 tsp crushed red pepper
  • 30 mL lime juice
  • salt and black pepper

Method

  1. Cut the chicken into bite-size pieces. Cook it in a very large skillet or wok with about half the olive oil until browned and cooked through, about 6-8 minutes. Remove and set aside.
  2. Add the frozen vegetable blend to the skillet.
  3. Cook uncovered over high heat for 8-10 minutes, stirring occasionally, so the excess water evaporates. Avoid crowding into a deep pot.
  4. Add the curry powder, garlic, ginger, and crushed red pepper. Cook for 30-60 seconds, stirring constantly.
  5. Return the chicken to the skillet.
  6. Add the lime juice. Toss for 1-2 minutes over high heat.
  7. Adjust seasoning with salt and black pepper and serve.
