Chile-Lime Pork & Cabbage Skillet

Ingredients

  • 907 g cabbage
  • 510 g pork tenderloin
  • 170 g bell pepper
  • 100 g corn
  • 10 mL olive oil
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp garlic powder
  • juice of 1 lime
  • cayenne to taste

Method

  1. Cook the pork tenderloin in a very large skillet or wok with about half the olive oil until browned and cooked through, about 4-6 minutes. Remove and set aside.
  2. Add the cabbage, bell pepper, and corn to the skillet.
  3. Cook uncovered over medium-high to high heat for 7-10 minutes, stirring occasionally, until the cabbage softens while still keeping some texture.
  4. Add the chili powder, cumin, garlic powder, and cayenne. Cook for 30-60 seconds, stirring constantly.
  5. Return the pork to the skillet.
  6. Add the lime juice, toss thoroughly, and serve.
