Chicken Fajita Cabbage Skillet

Chicken cooked with cabbage and a large amount of frozen peppers and onions, seasoned with fajita spices, kept relatively dry rather than saucy.

Ingredients

  • 907 g cabbage
  • 454 g chicken
  • 454 g frozen peppers and onions
  • 10 mL olive oil
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • juice of 1 lime

Method

  1. Cut the chicken into strips. Cook it in a very large skillet or wok with about half the olive oil until browned and cooked through, about 6-8 minutes. Remove and set aside.
  2. Add the cabbage and frozen peppers and onions to the skillet.
  3. Cook uncovered over medium-high to high heat for 7-10 minutes, stirring occasionally, until the cabbage softens while still keeping some texture and most of the liquid has cooked off -- this version should stay relatively dry rather than becoming saucy.
  4. Add the cumin, chili powder, smoked paprika, garlic powder, and oregano. Cook for 30-60 seconds, stirring constantly.
  5. Return the chicken to the skillet.
  6. Add the lime juice, toss thoroughly, and serve.
