Thai Chili-Lime Shrimp Stir-Fry

Ingredients
- 907 g Asian vegetable blend
- 567 g shrimp
- 10 mL olive oil
- 30 mL soy sauce
- 15 mL rice vinegar
- 30 mL lime juice
- 12 g garlic
- 10 g ginger
- 1 tsp crushed chili
- basil

Method
- Cook the shrimp in a very large skillet or wok with about half the olive oil until pink and opaque, about 1-2 minutes per side. Remove and set aside.
- Add the frozen Asian vegetable blend to the skillet.
- Cook uncovered over high heat for 8-10 minutes, stirring occasionally, so the excess water evaporates. Avoid crowding into a deep pot.
- Add the garlic, ginger, and crushed chili. Cook for 30-60 seconds, stirring constantly.
- Return the shrimp to the skillet.
- Add the soy sauce, rice vinegar, and lime juice. Toss for 1-2 minutes over high heat.
- Stir in basil to taste off the heat and serve.
